On the first days of September at full ripeness and full aromatic expression. Manual harvest. 2017 was a small harvest with good health and perfect maturity of the grapes.
100% Viognier from 15 years old vines.
Destemming and gentle pressing of the grapes in a pneumatic press after a short fermentation on the skins. Vinification in old growth oak barrels.
Fermentation for about 20 days, with temperature controled by submerged rods. The lees are stirred for 3 months, and then the wine is aged in the same barrels until February 2019.
Beautiful golden yellow color.
A powerful nose, rich and expressive with notes of vanilla and white flowers.
On the palate this wine is big and round, silky and elegant, with notes of white fruits, jasmine, and a light smokey quality... The wood is already well integrated, barely present. This wine is powerful, elegant and balanced, mouth filling and well integrated, with very persistent aromas. Serve chilled but not cold (10 to 12° C).
Food pairing : as an aperitif, with foie gras, but also to accompany a fine fish, white meat and goat cheese. Pairs wonderfully with spicy and exotic dishes.
