Mainly clay and limestone yet sandy soil in some parcels.
Between September 10th and 25th at full maturity of the two varietals.
Grenache (65%) and Syrah (35%)
Traditional vinification with destemming. Fermentation for around 10 days in stainless steel tanks between 25° and 30° C.
Daily rack and return and pump over. Blended in January with bottling a few months later…
Beautiful bright garnet color.
Fine nose with aromas of red fruit, spices, and notes of “garrigue” (aromatic Mediterranean herbs and plants from Provence : thyme, rosemary, lavender, juniper… Basically the scrubby aromatic plants of Provence).
On the palate, clean and straightforward attack, with beautiful and fleshy substance. Red fruits dominate the palate, mixed with spices, and round tannins.
Well-balanced wine with a good freshness and nice structure in the mouth. It is a pleasurable wine with a potential to age 3-5 years.
Food pairing : to drink with charcuterie and grilled meats. Enjoy with spring and summer meals.
